A simple and nutritious one-pot lentil dal recipe that is vegan and healthy.
Ingredients

- 1 cup lentils
- 1 onion, chopped
- 2 tomatoes, diced
- 2 garlic cloves, minced
- 1 inch ginger, grated
- 1 tablespoon turmeric powder
- 1 tablespoon cumin seeds
- 2 tablespoons oil
- 4 cups water
- Salt to taste
- Fresh cilantro for garnish
Instructions
- Heat oil in a pot over medium heat.
- Add cumin seeds and let them sizzle.
- Add chopped onion, garlic, and ginger. Sauté until onion is translucent.
- Add diced tomatoes and cook until soft.
- Add lentils, turmeric powder, and salt. Stir well.
- Add water and bring to a boil.
- Reduce heat and simmer for 30 minutes until lentils are tender.
- Garnish with fresh cilantro before serving.
Notes
- Adjust water for desired consistency.
- Serve with rice or bread.
- Store leftovers in the refrigerator for up to 3 days.
