  • 200g (1 cup) pitted dates, chopped

  • 120ml (½ cup) water

  • 100g (½ cup) unsalted butter

  • 150g (1 cup) almond flour

  • 2 large eggs

  • 100g (½ cup) brown sugar, packed

  • 1 tsp vanilla extract

  • ½ tsp ground cinnamon (optional)

  • Pinch of salt

Optional Glaze:

  • 100g (¾ cup) powdered sugar

  • 12 tbsp water or cream

  • ½ tsp vanilla extract


Instructions

  • Preheat the oven to 175°C (350°F). Grease and line an 8-inch (20 cm) round cake pan with parchment paper.

  • In a small saucepan, combine chopped dates and water. Bring to a simmer over medium heat, stirring occasionally, until the dates are softened (about 5–7 minutes). Mash them into a thick paste.

  • In a large bowl, melt the butter and allow it to cool slightly. Add the date paste, almond flour, eggs, brown sugar, vanilla, cinnamon (if using), and salt. Stir until just combined.

  • Pour the batter into the prepared pan. Smooth the top with a spatula.

  • Bake for 20–25 minutes, or until a toothpick inserted into the center comes out clean or with moist crumbs.

  • Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

  • (Optional) For the glaze, whisk together powdered sugar, water or cream, and vanilla extract until smooth. Drizzle over the cooled almond date cake before serving.

Notes

To make this recipe vegan, replace eggs with 2 flax eggs (2 tbsp ground flaxseed + 5 tbsp water). For a sugar-free almond date cake, substitute brown sugar with coconut sugar or monk fruit sweetener. You can also add orange zest or cardamom for extra flavor.
