Ingredients

For the Cake:

  • Almond Flour: 1 ½ cups (150 grams)
  • All-Purpose Flour (or Gluten-Free Flour): ½ cup (65 grams)
  • Granulated Sugar: ½ cup (100 grams)
  • Honey or Maple Syrup: ¼ cup (60 ml)
  • Large Eggs: 4 (approx. 200 grams without shells)
  • Unsweetened Yogurt (or Plant-Based Yogurt): ½ cup (120 ml)
  • Vegetable Oil (or Melted Coconut Oil): ¼ cup (60 ml)
  • Orange Zest: 1 tablespoon (zest of 1 medium orange)
  • Orange Blossom Water: 2 tablespoons (30 ml)
  • Baking Powder: 1 teaspoon (4 grams)
  • Salt: ¼ teaspoon (1.5 grams)
  • Vanilla Extract: 1 teaspoon (5 ml)

For the Glaze:

  • Powdered Sugar: ¼ cup (30 grams)
  • Orange Juice: 1 tablespoon (15 ml)
  • Orange Blossom Water: ½ teaspoon (2.5 ml)

Instructions

1. Preheat and Prepare the Pan:

Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan or line it with parchment paper for easy removal.

2. Mix Dry Ingredients:

In a large mixing bowl, combine almond flour, all-purpose flour, granulated sugar, baking powder, and salt. Whisk them together to ensure even distribution.

3. Prepare the Wet Ingredients:

In a separate bowl, whisk together eggs, yogurt, honey (or maple syrup), vegetable oil, orange zest, orange blossom water, and vanilla extract. Stir until smooth and well blended.

4. Combine Wet and Dry Ingredients:

Gradually pour the wet mixture into the dry ingredients. Stir gently until the batter is smooth and fully combined.

5. Bake the Cake:

Pour the batter into the prepared cake pan, smoothing the top with a spatula. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean, and the cake has a golden-brown hue.

6. Make the Glaze:

While the cake cools, prepare the glaze by whisking together powdered sugar, orange juice, and orange blossom water in a small bowl until smooth.

7. Add the Finishing Touches:

Once the cake has cooled for about 10 minutes, drizzle the glaze evenly over the top. Let it set before serving.

8. Cool and Serve:

Allow the cake to cool completely before slicing. Serve as is, or garnish with additional orange zest or almond slivers for a decorative touch.

Notes

– Use fresh orange zest for the best flavor.

– For a gluten-free version, replace all-purpose flour with your favorite gluten-free blend.

– Orange blossom water is key to the cake’s unique aroma, but you can substitute rose water or vanilla extract if needed.
