Ingredients

  • 1 lb Andouille sausage, sliced
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 bell pepper, chopped
  • 4 cups chicken broth
  • 1 can (14.5 oz) diced tomatoes, undrained
  • 2 cups kale, chopped
  • 1 tsp smoked paprika
  • 1 tsp thyme
  • Salt and pepper to taste

Instructions

  1. In a large pot, cook the Andouille sausage over medium heat until browned.
  2. Add the onion, garlic, carrots, celery, and bell pepper. Cook until the vegetables are softened.
  3. Stir in the chicken broth, diced tomatoes, smoked paprika, and thyme.
  4. Bring to a boil, then reduce heat and simmer for 20 minutes.
  5. Add the kale and cook for an additional 5 minutes.
  6. Season with salt and pepper to taste before serving.
