A hearty and flavorful soup made with Andouille sausage, vegetables, and spices.
Ingredients

- 1 lb Andouille sausage, sliced
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 2 carrots, diced
- 2 celery stalks, diced
- 1 bell pepper, chopped
- 4 cups chicken broth
- 1 can (14.5 oz) diced tomatoes, undrained
- 2 cups kale, chopped
- 1 tsp smoked paprika
- 1 tsp thyme
- Salt and pepper to taste
Instructions
- In a large pot, cook the Andouille sausage over medium heat until browned.
- Add the onion, garlic, carrots, celery, and bell pepper. Cook until the vegetables are softened.
- Stir in the chicken broth, diced tomatoes, smoked paprika, and thyme.
- Bring to a boil, then reduce heat and simmer for 20 minutes.
- Add the kale and cook for an additional 5 minutes.
- Season with salt and pepper to taste before serving.
Notes
- Serve with crusty bread.
- Store leftovers in the refrigerator for up to 3 days.
- This soup can be frozen for up to 3 months.
