Ingredients

  • 2 medium apples, peeled and grated (about 200g)

  • 1 ½ cups almond flour (150g)

  • 1 teaspoon baking powder

  • ¼ teaspoon salt

  • 1 teaspoon ground cardamom

  • 3 large eggs

  • ½ cup granulated sugar (100g)

  • ½ teaspoon vanilla extract

  • ¼ cup unsalted butter, melted (60g)

  • ¼ cup fresh apple juice (60ml)

Optional Glaze:

  • ¼ cup powdered sugar (30g)

  • 1 tablespoon fresh apple juice (15ml)

  • ¼ teaspoon ground cinnamon


Instructions

  • Preheat the oven to 350°F (175°C). Grease and line an 8-inch round cake pan with parchment paper.

  • In a small bowl, mix the grated apples with the apple juice. Set aside.

  • In a medium bowl, whisk together the almond flour, baking powder, salt, and cardamom.

  • In a large bowl, beat the eggs and sugar until pale and fluffy. Stir in the melted butter, vanilla, and the apple mixture.

  • Gradually fold in the dry ingredients until the batter is smooth and well combined.

  • Pour the batter into the prepared pan. Smooth the top with a spatula.

  • Bake the apple almond cake for 30–35 minutes, or until a toothpick inserted in the center comes out clean.

  • Let the cake cool in the pan for 10 minutes, then transfer it to a wire rack to cool fully.

  • For the glaze (optional), whisk together powdered sugar, apple juice, and cinnamon. Drizzle over the cooled cake.

Notes

  • You can substitute coconut sugar for granulated sugar for a slightly caramel-like taste and lower glycemic index.

  • If you’re out of cardamom, try a mix of cinnamon and nutmeg for a more traditional spiced cake.

  • This gluten-free apple cake also works well as muffins — just reduce bake time to 18–20 minutes.
