2 medium apples, peeled and grated (about 200g)

Optional Glaze:

¼ cup powdered sugar (30g)

1 tablespoon fresh apple juice (15ml)

Instructions

Preheat the oven to 350°F (175°C). Grease and line an 8-inch round cake pan with parchment paper.

In a small bowl, mix the grated apples with the apple juice. Set aside.

In a medium bowl, whisk together the almond flour, baking powder, salt, and cardamom.

In a large bowl, beat the eggs and sugar until pale and fluffy. Stir in the melted butter, vanilla, and the apple mixture.

Gradually fold in the dry ingredients until the batter is smooth and well combined.

Pour the batter into the prepared pan. Smooth the top with a spatula.

Bake the apple almond cake for 30–35 minutes, or until a toothpick inserted in the center comes out clean.
