Ingredients

  • 1/2 cup unsalted butter, softened

  • 2 large eggs
  • 1 teaspoon vanilla extract

  • 1 teaspoon baking powder

  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon salt

For the Cinnamon Frosting:

  • 1/2 cup unsalted butter, softened
  • 2 cups powdered sugar
  • 1 teaspoon ground cinnamon
  • 1 tablespoon milk (more if needed)
  • A pinch of salt
  • Optional: small apple pieces for garnish

Instructions

  1. Preheat your oven to 350°F (175°C) and line a cupcake pan with paper liners.
  2. In a bowl, whisk together the dry ingredients: flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  3. In a large mixing bowl, cream together the butter and sugar until light and fluffy. Add eggs one at a time, then stir in vanilla extract and apple cider.
  4. Gradually add the dry ingredients to the wet mixture, mixing gently until just combined.
  5. Fill the cupcake liners about ⅔ full with batter.
  6. Bake for 18-20 minutes, or until a toothpick comes out clean. Cool in the pan for 5 minutes, then transfer to a wire rack.
  7. For the frosting, beat together the butter and powdered sugar until smooth. Add cinnamon, milk, and salt, mixing until creamy.
  8. Once cupcakes are cool, frost them and garnish with cinnamon and apple pieces if desired.
