For the Cinnamon Frosting:
- 1/2 cup unsalted butter, softened
- 2 cups powdered sugar
- 1 teaspoon ground cinnamon
- 1 tablespoon milk (more if needed)
- A pinch of salt
- Optional: small apple pieces for garnish
Instructions
- Preheat your oven to 350°F (175°C) and line a cupcake pan with paper liners.
- In a bowl, whisk together the dry ingredients: flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
- In a large mixing bowl, cream together the butter and sugar until light and fluffy. Add eggs one at a time, then stir in vanilla extract and apple cider.
- Gradually add the dry ingredients to the wet mixture, mixing gently until just combined.
- Fill the cupcake liners about ⅔ full with batter.
- Bake for 18-20 minutes, or until a toothpick comes out clean. Cool in the pan for 5 minutes, then transfer to a wire rack.
- For the frosting, beat together the butter and powdered sugar until smooth. Add cinnamon, milk, and salt, mixing until creamy.
- Once cupcakes are cool, frost them and garnish with cinnamon and apple pieces if desired.
