Description
Delicious apple cinnamon crepes that are vegan and gluten free.
Ingredients

- 1 cup gluten free flour
- 1 1/2 cups almond milk
- 1 tbsp maple syrup
- 1 tsp vanilla extract
- 1/2 tsp cinnamon
- 1/4 tsp salt
- 2 apples, peeled and sliced
- 1 tbsp coconut oil
- 2 tbsp brown sugar
Instructions
- In a bowl, mix gluten free flour, almond milk, maple syrup, vanilla extract, cinnamon, and salt until smooth.
- Heat a non-stick skillet over medium heat and add a little coconut oil.
- Pour a ladle of batter into the skillet and swirl to spread evenly.
- Cook for 2-3 minutes until the edges lift, then flip and cook for another 1-2 minutes.
- Repeat with remaining batter.
- In another pan, sauté apples in coconut oil and brown sugar until soft.
- Fill each crepe with sautéed apples and fold.
- Serve warm.
Notes
- Store leftover crepes in the fridge for up to 2 days.
- Reheat in a skillet before serving.
- Adjust sweetness by adding more or less sugar.
