Description

Delicious apple cinnamon crepes that are vegan and gluten free.


Ingredients

  • 1 cup gluten free flour
  • 1 1/2 cups almond milk
  • 1 tbsp maple syrup
  • 1 tsp vanilla extract
  • 1/2 tsp cinnamon
  • 1/4 tsp salt
  • 2 apples, peeled and sliced
  • 1 tbsp coconut oil
  • 2 tbsp brown sugar

Instructions

  1. In a bowl, mix gluten free flour, almond milk, maple syrup, vanilla extract, cinnamon, and salt until smooth.
  2. Heat a non-stick skillet over medium heat and add a little coconut oil.
  3. Pour a ladle of batter into the skillet and swirl to spread evenly.
  4. Cook for 2-3 minutes until the edges lift, then flip and cook for another 1-2 minutes.
  5. Repeat with remaining batter.
  6. In another pan, sauté apples in coconut oil and brown sugar until soft.
  7. Fill each crepe with sautéed apples and fold.
  8. Serve warm.

Notes

  • Store leftover crepes in the fridge for up to 2 days.
  • Reheat in a skillet before serving.
  • Adjust sweetness by adding more or less sugar.
