Description
Crispy baked potato skins loaded with cheese and bacon.
Ingredients

			- 4 large Russet potatoes
- 1 cup shredded cheddar cheese
- 1/2 cup cooked and crumbled bacon
- 1/4 cup sour cream
- 2 green onions, chopped
- Olive oil
- Salt
Instructions
- Preheat oven to 400°F (200°C).
- Wash and dry the potatoes, then prick them with a fork.
- Rub olive oil and salt on the potatoes.
- Bake for 45-60 minutes until tender.
- Let cool, then cut the potatoes in half and scoop out the flesh.
- Brush the skins with olive oil and season with salt.
- Bake the skins for an additional 10-15 minutes until crispy.
- Remove from oven and fill with cheese and bacon.
- Return to oven for 5 minutes until cheese melts.
- Top with sour cream and green onions before serving.
Notes
- Use leftover potato flesh for mashed potatoes.
- Customize toppings to your preference.
- Store leftovers in the refrigerator.
