Description

Crispy baked potato skins loaded with cheese and bacon.


Ingredients

  • 4 large Russet potatoes
  • 1 cup shredded cheddar cheese
  • 1/2 cup cooked and crumbled bacon
  • 1/4 cup sour cream
  • 2 green onions, chopped
  • Olive oil
  • Salt

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Wash and dry the potatoes, then prick them with a fork.
  3. Rub olive oil and salt on the potatoes.
  4. Bake for 45-60 minutes until tender.
  5. Let cool, then cut the potatoes in half and scoop out the flesh.
  6. Brush the skins with olive oil and season with salt.
  7. Bake the skins for an additional 10-15 minutes until crispy.
  8. Remove from oven and fill with cheese and bacon.
  9. Return to oven for 5 minutes until cheese melts.
  10. Top with sour cream and green onions before serving.

  • Use leftover potato flesh for mashed potatoes.
