- 1 1/2 cups all-purpose flour
- 1/2 cup granulated sugar
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, melted
- 2 large eggs
- 1/2 cup buttermilk
- 1 tablespoon lemon zest
- 1 cup fresh blueberries
- 1/4 cup brown sugar
- 1/2 cup rolled oats
- 1/4 cup all-purpose flour for streusel
- 1 teaspoon cinnamon
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with liners.
- In a bowl, mix flour, sugar, baking powder, baking soda, and salt.
- In another bowl, whisk melted butter, eggs, buttermilk, and lemon zest.
- Combine wet and dry ingredients until just mixed. Fold in blueberries.
- In a small bowl, mix brown sugar, oats, flour, and cinnamon for the streusel topping.
- Fill muffin cups with batter and sprinkle streusel on top.
- Bake for 18-20 minutes or until a toothpick comes out clean.
- Let cool before serving.

- Use fresh blueberries for the best flavor.
- Store muffins in an airtight container.
- Can substitute buttermilk with regular milk.
