 - 1 cup unsalted butter (softened)
 - 1 cup granulated sugar
 - 3/4 cup packed light brown sugar
 - 2 large eggs
 - 2 cups creamy peanut butter
 - 2 teaspoons pure vanilla extract
 - 2 cups semi-sweet chocolate chips
 - Optional: 1/2 cup granulated sugar for rolling
 
Instructions
- Whisk together flour, baking powder, baking soda, and salt in a bowl.
 - Cream together softened butter, granulated sugar, and brown sugar until light and fluffy. Add eggs one at a time, mixing well after each addition.
 - Mix in peanut butter and vanilla extract until smooth.
 - Gradually add dry mixture into wet ingredients, folding gently to combine.
 - Fold in chocolate chips until evenly distributed.
 - Chill dough in the refrigerator for at least 1 hour.
 - Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
 - Scoop dough into balls and optionally roll in granulated sugar before placing on baking sheets.
 - Flatten each dough ball slightly and bake for 14-15 minutes until edges are set.
 - Allow cookies to cool on the baking sheet for 10 minutes before transferring to a wire rack to cool completely.
 
Notes
Chill the dough longer for a better texture and store cookies in an airtight container to maintain freshness.
