- 200g almond flour (about 2 cups)
- 120g honey (about 1/2 cup)
- 3 large eggs
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon ground cardamom
- 1/4 teaspoon salt
- 1/2 teaspoon baking soda
- 60ml olive oil (about 1/4 cup)
- 1 teaspoon vanilla extract
- 120g honey (for the syrup, about 1/2 cup)
- 2 tablespoons water
- 1 teaspoon lemon juice
- 1/4 teaspoon ground cinnamon
- 50g pistachios, chopped (about 1/3 cup)
Instructions
- Preheat the oven to 350°F (175°C). Line a cake pan with parchment paper.
- In a large mixing bowl, whisk the eggs, honey, olive oil, and vanilla extract until smooth.
- Add the almond flour, cinnamon, cardamom, salt, and baking soda. Stir to combine into a thick batter.
- Pour the batter into the prepared cake pan and spread it evenly.
- Bake for 25-30 minutes or until a toothpick inserted comes out clean.
- While the cake is baking, prepare the honey syrup by combining honey, water, lemon juice, and cinnamon in a small saucepan. Heat over low heat until the honey dissolves. Set aside to cool.
- Once the cake is done, cool for 10 minutes in the pan, then transfer to a wire rack.
- Drizzle the warm honey syrup over the cake while it’s still warm.
- Sprinkle the chopped pistachios on top for a beautiful and tasty finish.
Notes
- You can use walnuts or other nuts instead of pistachios for a different flavor.
- If you prefer a less sweet cake, reduce the amount of honey in the syrup.
