Description
Banana Bread Brownies are a delicious fusion of moist banana bread and fudgy brownies, topped with a rich glaze. Perfect for using up overripe bananas and creating a sweet, indulgent treat.
Ingredients
Scale
For the brownies:
- 3 ripe bananas (mashed)
- 1/2 cup unsalted butter (melted)
- 1 cup brown sugar (packed)
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- 1/3 cup unsweetened cocoa powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup chocolate chips (optional)
- 1/2 cup chopped nuts (optional, such as walnuts or pecans)
For the glaze:
- 4 tablespoons butter
- 2 cups powdered sugar
- 1 teaspoon vanilla extract
- 1–2 tablespoons milk
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9×9-inch baking pan or line it with parchment paper.
- In a large mixing bowl, mash the ripe bananas until smooth. Add the melted butter, brown sugar, eggs, and vanilla extract, mixing until well combined.
- In another bowl, whisk together the flour, cocoa powder, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Fold in chocolate chips and/or chopped nuts if using.
- Pour the brownie batter into the prepared pan and spread it evenly. Bake for 25-30 minutes. To check for doneness, insert a toothpick into the center – it should come out with a few moist crumbs, not wet batter.
- Allow the brownies to cool in the pan before cutting them into squares.
- For the glaze, melt the butter in a saucepan over medium heat. Add the powdered sugar, vanilla extract, and 1 tablespoon of milk, stirring until smooth. If the glaze is too thick, add more milk to reach desired consistency.
- Drizzle the glaze over the cooled brownies and allow it to set before serving.
Notes
- Use ripe bananas for the best sweetness and texture.
- For a dairy-free option, substitute coconut oil or vegetable oil for butter in the brownie batter and glaze.
- If you want a gluten-free version, use a 1:1 gluten-free flour blend in place of all-purpose flour.
- Feel free to adjust the thickness of the glaze by adding more or less milk to suit your preference.
