Description

Banana Bread Brownies are a delicious fusion of moist banana bread and fudgy brownies, topped with a rich glaze. Perfect for using up overripe bananas and creating a sweet, indulgent treat.

Ingredients

Scale

For the brownies:

  • 3 ripe bananas (mashed)
  • 1/2 cup unsalted butter (melted)
  • 1 cup brown sugar (packed)
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1/3 cup unsweetened cocoa powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup chocolate chips (optional)
  • 1/2 cup chopped nuts (optional, such as walnuts or pecans)

For the glaze:

  • 4 tablespoons butter
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 12 tablespoons milk

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×9-inch baking pan or line it with parchment paper.
  2. In a large mixing bowl, mash the ripe bananas until smooth. Add the melted butter, brown sugar, eggs, and vanilla extract, mixing until well combined.
  3. In another bowl, whisk together the flour, cocoa powder, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Fold in chocolate chips and/or chopped nuts if using.
  4. Pour the brownie batter into the prepared pan and spread it evenly. Bake for 25-30 minutes. To check for doneness, insert a toothpick into the center – it should come out with a few moist crumbs, not wet batter.
  5. Allow the brownies to cool in the pan before cutting them into squares.
  6. For the glaze, melt the butter in a saucepan over medium heat. Add the powdered sugar, vanilla extract, and 1 tablespoon of milk, stirring until smooth. If the glaze is too thick, add more milk to reach desired consistency.
  7. Drizzle the glaze over the cooled brownies and allow it to set before serving.

Notes

  • Use ripe bananas for the best sweetness and texture.
  • For a dairy-free option, substitute coconut oil or vegetable oil for butter in the brownie batter and glaze.
  • If you want a gluten-free version, use a 1:1 gluten-free flour blend in place of all-purpose flour.
  • Feel free to adjust the thickness of the glaze by adding more or less milk to suit your preference.
