Instructions

  1. Prepare the pie crust: If using store-bought, follow package instructions for pre-baking. If homemade, roll out dough, fit it into a pan, prick the bottom with a fork, and bake at 375°F (190°C) for 10-15 minutes until golden. Cool completely.
  2. Make the custard filling: Whisk egg yolks and cornstarch together. In a saucepan, combine milk, heavy cream, sugar, and salt, and heat until simmering. Gradually whisk the hot mixture into the egg yolks. Return to the saucepan and cook on low heat, stirring constantly, for 1-2 minutes until thickened. Remove from heat and stir in vanilla and butter. Cover with plastic wrap touching the custard surface to prevent skin formation and let cool slightly.
  3. Assemble the pie: Slice bananas and layer them on the cooled pie crust. Pour custard filling over the bananas and smooth it out. Refrigerate for at least 4 hours to set the custard.
  4. Make the whipped cream: Beat cold heavy cream, sugar, and vanilla with an electric mixer until medium peaks form, about 2-3 minutes.
  5. Serve: Spread whipped cream over the chilled pie and garnish with extra banana slices and cinnamon, if desired. Serve cold and enjoy!
