Instructions

- In another bowl, beat the eggs and mix in the mashed bananas and cinnamon.
- Heat a non-stick skillet over medium heat and add the butter.
- Pour the banana and egg mixture into the skillet.
- Cook for 2-3 minutes until the edges start to set.
- Carefully flip the omelet and cook for another 2-3 minutes.
- Serve warm, drizzled with honey if desired.
