A rich and creamy cheesecake with the flavor of bananas foster.
Ingredients

- 1 ½ cups graham cracker crumbs
- 1/4 cup sugar
- 1/2 cup butter, melted
- 3 (8 ounce) packages cream cheese
- 1 cup sugar
- 3 eggs
- 2 ripe bananas, mashed
- 1 teaspoon vanilla extract
- 1/4 cup brown sugar
- 1/4 cup rum
- 1/4 cup butter
- 1/2 teaspoon cinnamon
Instructions
- Preheat oven to 325°F (165°C).
- Mix graham cracker crumbs, sugar, and melted butter in a bowl.
- Press mixture into the bottom of a springform pan.
- In a large bowl, beat cream cheese and sugar until smooth.
- Add eggs one at a time, mixing well after each addition.
- Stir in mashed bananas and vanilla extract.
- Pour mixture over the crust in the springform pan.
- Bake for 60 minutes or until set.
- In a saucepan, melt butter over medium heat. Stir in brown sugar, rum, and cinnamon.
- Cook for 2-3 minutes until sugar dissolves and mixture thickens.
- Pour the banana foster sauce over the cooled cheesecake.
Notes
- Chill the cheesecake for at least 4 hours before serving.
- Store leftovers in the refrigerator.
- For a non-alcoholic version, omit the rum.
