Ingredients

- 1 pound chicken fillet, diced
- 1/2 cup mayonnaise
- 2 tablespoons sweet chili sauce
- 1 tablespoon sriracha
- 1 cup shredded carrots
- 1 cup sliced cucumbers
- 2 green onions, chopped
- Salt and pepper to taste
Instructions
- Cook rice according to package instructions.
- In a bowl, mix mayonnaise, sweet chili sauce, and sriracha.
- Season diced chicken with salt and pepper.
- Cook chicken in a skillet over medium heat until fully cooked.
- Assemble the bowl with rice, chicken, carrots, and cucumbers.
- Drizzle sauce over the top and garnish with green onions.
Notes
- Adjust the spice level by varying the amount of sriracha.
- This bowl can be made ahead and stored in the fridge.
