A delicious and easy recipe for bang bang salmon bites served in a bowl.
Ingredients

- 1 lb salmon, cut into bite-sized pieces
- 1/2 cup panko breadcrumbs
- 1/4 cup mayonnaise
- 2 tablespoons sweet chili sauce
- 1 tablespoon sriracha
- 2 cups cooked rice
- 1 cup mixed vegetables (such as bell peppers and carrots)
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- In a bowl, mix mayonnaise, sweet chili sauce, and sriracha.
- Coat salmon pieces with the sauce mixture.
- Roll the salmon in panko breadcrumbs.
- Place salmon bites on a baking sheet.
- Bake for 12-15 minutes until golden brown.
- In a pan, heat olive oil and sauté mixed vegetables until tender.
- Serve salmon bites over cooked rice and top with sautéed vegetables.
Notes
- Adjust spice level by adding more or less sriracha.
- Use any type of fish if preferred.
- Great for meal prep; store in an airtight container.
