Ingredients

- 4 chicken thighs
- 1 cup rice
- 1 cup chicken broth
- 1/2 cup honey BBQ sauce
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- 1 cup mixed vegetables (optional)
Instructions
- Heat olive oil in a large pan over medium heat.
- Season chicken thighs with garlic powder, onion powder, salt, and pepper.
- Brown chicken thighs in the pan for about 5 minutes on each side.
- Add rice, chicken broth, and honey BBQ sauce to the pan.
- Stir to combine and bring to a simmer.
- Cover and cook for 20 minutes or until rice is tender.
- Add mixed vegetables if using, and cook for an additional 5 minutes.
- Remove from heat and let sit for 5 minutes before serving.
Notes
- Adjust the amount of BBQ sauce based on your taste.
- For extra flavor, marinate the chicken in BBQ sauce for a few hours before cooking.
- This dish can be made with chicken breasts instead of thighs.
