Description
A delicious vegetarian dish made with beans and cheese wrapped in tortillas and topped with sauce.
Ingredients

- 1 can black beans, drained and rinsed
- 1 cup shredded cheese
- 8 corn tortillas
- 2 cups enchilada sauce
- 1/2 cup chopped onions
- 1/2 cup chopped cilantro
- 1 tablespoon olive oil
- 1 teaspoon cumin
Instructions
- Preheat oven to 350°F (175°C).
- Heat olive oil in a pan and sauté onions until soft.
- Add black beans and cumin, cook for 5 minutes.
- Spread a small amount of enchilada sauce on the bottom of a baking dish.
- Fill each tortilla with bean mixture and cheese, roll them up.
- Place enchiladas seam side down in the dish.
- Pour remaining enchilada sauce over the top.
- Sprinkle with remaining cheese.
- Bake for 20 minutes until cheese is melted.
Notes
- Feel free to add vegetables like peppers or corn.
- Use any type of cheese you prefer.
