Description

Ingredients

  • 1 can black beans, drained and rinsed
  • 1 cup shredded cheese
  • 8 corn tortillas
  • 2 cups enchilada sauce
  • 1/2 cup chopped onions
  • 1/2 cup chopped cilantro
  • 1 tablespoon olive oil
  • 1 teaspoon cumin

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Heat olive oil in a pan and sauté onions until soft.
  3. Add black beans and cumin, cook for 5 minutes.
  4. Spread a small amount of enchilada sauce on the bottom of a baking dish.
  5. Fill each tortilla with bean mixture and cheese, roll them up.
  6. Place enchiladas seam side down in the dish.
  7. Pour remaining enchilada sauce over the top.
  8. Sprinkle with remaining cheese.
  9. Bake for 20 minutes until cheese is melted.
