- 3 lbs beef chuck roast
- 1 onion, chopped
- 4 cloves garlic, minced
- 2 jalapeño peppers, chopped
- 1/4 cup lime juice
- 1/4 cup apple cider vinegar
- 2 tsp ground cumin
- 2 tsp dried oregano
- 1 tsp black pepper
- 1 tsp salt
- 1 cup beef broth
Instructions
- Season the beef with salt and pepper.
- In a large skillet, sear the beef on all sides over medium-high heat.
- Remove beef and place it in a slow cooker.
- Add onion, garlic, jalapeños, lime juice, vinegar, cumin, oregano, and beef broth to the slow cooker.
- Cover and cook on low for 8 hours or until the beef is tender.
- Shred the beef with two forks and mix with the cooking liquid.
- Serve in tacos or bowls with your favorite toppings.
Notes
- Adjust the spice level by adding more or fewer jalapeños.
- Can be stored in the refrigerator for up to 3 days.
