Description
Beef Enchiladas are rolled tortillas filled with seasoned beef and topped with a flavorful sauce.
Ingredients

- 1 lb ground beef
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 can (10 oz) enchilada sauce
- 8 corn tortillas
- 1 cup shredded cheese
- 1 tsp cumin
- 1 tsp chili powder
- Salt and pepper to taste
Instructions
- Preheat oven to 350°F (175°C).
- In a skillet, cook ground beef with onion and garlic until beef is browned.
- Add cumin, chili powder, salt, and pepper. Mix well.
- Warm tortillas in a pan or microwave to soften.
- Fill each tortilla with beef mixture and roll tightly.
- Place rolled tortillas in a baking dish.
- Pour enchilada sauce over the top.
- Sprinkle cheese on top.
- Bake for 20-25 minutes until cheese is melted.
Notes
- Serve with sour cream or guacamole.
- Can substitute ground turkey for a leaner option.
- Add beans or vegetables for extra filling.
