Instructions
- Preheat the oven to 375°F (190°C) and prepare a 12-cup muffin tin by greasing it or using paper liners.
- In a mixing bowl, combine sugar, egg, oil (or melted butter), milk, and vanilla. Beat until smooth and creamy, but avoid overmixing.
- In another bowl, whisk together flour, baking powder, and salt. Gradually add the dry mixture to the wet mixture, stirring gently until just combined.
- Add sour cream and stir until evenly distributed. Gently fold in blueberries, being careful not to crush them.
- Distribute the batter evenly among the muffin cups, filling each to the top. Sprinkle optional sugar on top for a crunchy texture.
- Bake for 25 minutes or until a toothpick inserted comes out clean. Let muffins cool in the tin for 5-10 minutes, then transfer to a wire rack.
