A creamy and rich vegan alfredo sauce that is also gluten-free.
Ingredients

- 1 cup raw cashews, soaked for 4 hours
- 1 cup almond milk
- 3 tablespoons nutritional yeast
- 2 tablespoons lemon juice
- 2 garlic cloves, minced
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon olive oil
- 1/2 teaspoon onion powder
Instructions
- Soak the cashews in water for 4 hours.
- Drain and rinse the cashews.
- In a blender, combine cashews, almond milk, nutritional yeast, lemon juice, garlic, salt, pepper, olive oil, and onion powder.
- Blend until smooth and creamy.
- Transfer to a saucepan and heat over medium heat until warm.
- Serve over your favorite gluten-free pasta.

- Adjust seasoning to taste.
- This sauce can be stored in the refrigerator for up to 5 days.
- Reheat gently on the stove before serving.
