- 1 cup shredded cheese (Mexican blend)
- 8 corn tortillas
- 1/2 cup chopped onions
- 1/4 cup chopped cilantro
- Lime wedges for serving
Instructions
- Heat a skillet over medium heat.
- Place a tortilla on the skillet.
- Add a layer of birria beef and cheese on one half of the tortilla.
- Fold the tortilla and cook until the cheese melts.
- Flip and cook the other side until golden brown.
- Remove from skillet and keep warm.
- Repeat with remaining tortillas.
- Serve with onions, cilantro, and lime wedges.
