Description

Ingredients

  • 2 lbs beef chuck roast
  • 1 lb lamb shoulder
  • 4 dried guajillo peppers
  • 2 dried ancho peppers
  • 4 cloves garlic
  • 1 onion, chopped
  • 2 tsp cumin
  • 1 tsp oregano
  • 4 cups beef broth
  • Salt to taste
  • Corn tortillas
  • Chopped cilantro
  • Diced onion
  • Lime wedges

Instructions

  1. Remove stems and seeds from dried peppers.
  2. Toast peppers in a dry skillet until fragrant.
  3. Blend toasted peppers with garlic, onion, cumin, oregano, and beef broth until smooth.
  4. In a large pot, add beef and lamb. Pour the blended sauce over the meat.
  5. Cook on low heat for 3-4 hours until the meat is tender.
  6. Shred the meat and return it to the pot to soak in the sauce.
  7. Warm corn tortillas on a skillet.
  8. Fill tortillas with the meat mixture and garnish with cilantro, onion, and lime.

Notes

  • Adjust spice level by using more or fewer peppers.
  • For extra flavor, marinate the meat overnight.
