Description

Birthday cupcakes are a delightful treat that brings joy to any celebration. With fluffy, moist cake and colorful sprinkles, these cupcakes are perfect for birthdays and special occasions.

Ingredients

Scale
  • 1 1/2 cups cake flour (170 g)
  • 1 cup granulated sugar (200 g)
  • 3/4 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • 6 tablespoons unsalted butter, melted and cooled (85 g)
  • 1/4 cup vegetable oil (60 ml)
  • 1/2 cup sour cream (113 g)
  • 1 large egg
  • 1 large egg yolk
  • 1 teaspoon vanilla extract
  • 1/4 cup whole milk (60 ml)
  • 1/3 cup sprinkles (jimmies or quins)
  • 1 batch white chocolate frosting or your favorite frosting

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a cupcake tin by lining it with paper liners.
  2. In a large mixing bowl, whisk together cake flour, sugar, baking powder, baking soda, and salt.
  3. In a separate bowl, whisk together melted butter, oil, sour cream, egg, egg yolk, and vanilla extract. Add milk and mix until smooth.
  4. Combine the wet mixture with the dry ingredients, stirring gently until just combined. Avoid over-mixing.
  5. Fold in the sprinkles evenly, ensuring they are well distributed.
  6. Divide the batter evenly into the cupcake tin, filling each liner about 3/4 full.
  7. Bake for 17-19 minutes, or until a toothpick inserted comes out clean. Let the cupcakes cool for 5-10 minutes in the tin before transferring them to a wire rack to cool completely.
  8. Frost the cupcakes with white chocolate frosting or your favorite frosting once they are completely cool.

Notes

  • For a lighter texture, substitute cake flour with all-purpose flour and cornstarch.
  • Plain yogurt can replace sour cream for a tangy twist.
  • Use unsweetened applesauce to substitute eggs if needed.
  • If you prefer convenience, store-bought frosting can be used.
