Description
A hearty and flavorful chili made with black beans and corn.
Ingredients

- 1 can black beans, drained and rinsed
- 1 can corn, drained
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, chopped
- 1 can diced tomatoes
- 2 cups vegetable broth
- 2 tablespoons chili powder
- 1 teaspoon cumin
- Salt and pepper to taste
Instructions
- Heat a pot over medium heat.
- Add onion and bell pepper, sauté until soft.
- Stir in garlic, cook for 1 minute.
- Add diced tomatoes, black beans, corn, vegetable broth, chili powder, and cumin.
- Bring to a boil, then reduce heat and simmer for 20 minutes.
- Season with salt and pepper.
- Serve hot.
