Ingredients

  • 1 cup black beans
  • 1 cup rice
  • 1 pound sausage
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 cups chicken broth
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt to taste
  • Pepper to taste

Instructions

  1. Rinse and soak black beans overnight.
  2. Cook sausage in a pot until browned. Remove and set aside.
  3. Add onion and garlic to the pot, sauté until soft.
  4. Add soaked black beans, rice, chicken broth, cumin, paprika, salt, and pepper.
  5. Bring to a boil, then reduce heat and simmer for 20 minutes.
  6. Stir in cooked sausage and cook for another 10 minutes.
  7. Serve warm.
