Ingredients

  • ½ cup unsalted butter, melted
  • 3 (8 oz) packages cream cheese, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1 cup sour cream
  • 1 cup cherry pie filling
  • ¼ cup chocolate shavings

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. Mix cookie crumbs and melted butter. Press into the bottom of a springform pan.
  3. In a bowl, beat cream cheese, sugar, and vanilla until smooth.
  4. Add eggs, one at a time, mixing well after each addition.
  5. Stir in sour cream until combined.
  6. Pour half of the cheesecake batter over the crust.
  7. Spread cherry pie filling over the batter.
  8. Top with remaining cheesecake batter.
  9. Bake for 55-60 minutes or until the center is set.
  10. Cool at room temperature, then refrigerate for at least 4 hours before serving.
