Instructions
- Season catfish fillets with blackening seasoning.
- Heat a skillet over medium-high heat and add a bit of oil.
- Cook catfish for about 4-5 minutes on each side until cooked through.
- In a saucepan, bring water to a boil.
- Add grits, reduce heat, and simmer for 15-20 minutes, stirring occasionally.
- Stir in milk, butter, salt, and pepper into the grits.
- Serve catfish over grits.
