Instructions
- Preheat the oven to 400°F (200°C).
- Season the chicken breasts with blackening seasoning.
- Heat olive oil in a skillet over medium-high heat.
- Sear the chicken for 3-4 minutes on each side until blackened.
- Transfer the chicken to the oven to finish cooking for about 15-20 minutes.
- In the same skillet, add diced sweet potatoes, salt, and pepper.
- Sauté the sweet potatoes until tender, about 10-15 minutes.
- Slice the cooked chicken and assemble the bowl with sweet potatoes and avocado.
- Garnish with fresh cilantro.
