- 1 cup (200g) pitted dates, chopped
- 1 cup (240ml) boiling water
- 1 tsp baking soda
- 1/2 cup (115g) unsalted butter, softened
- 3/4 cup (150g) light brown sugar
- 2 large eggs
- 1 tsp vanilla extract
- Zest of 2 blood oranges
- 1/2 cup (120ml) blood orange juice
- 1 1/2 cups (190g) all-purpose flour
- 1 tsp baking powder
- 1/4 tsp ground cardamom
- 1/4 tsp salt
- 1/2 cup (60g) shelled pistachios, chopped
- 1/2 cup (100g) sugar
- 1/2 cup (120ml) blood orange juice
- 1 tsp rosewater
Instructions
- Chop the pitted dates and combine with baking soda in a bowl. Pour boiling water over them and let sit for 10 minutes.
- Cream together the softened butter and light brown sugar until light and fluffy. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract, blood orange zest, and blood orange juice.
- In another bowl, whisk together flour, baking powder, ground cardamom, and salt. Gradually fold this dry mixture into the wet ingredients, alternating with the mashed date mixture. Stir in chopped pistachios.
- Preheat the oven to 350°F (175°C). Grease and line an 8-inch round cake tin. Pour the batter into the prepared tin and smooth the top. Bake for 40 to 45 minutes.
- While the cake is baking, prepare the rosewater syrup by combining sugar and blood orange juice in a saucepan over low heat until the sugar dissolves. Stir in rosewater.
- Once the cake is done, let it cool for 10-15 minutes in the pan. Brush the warm cake with the rosewater syrup and transfer to a wire rack to cool completely.
