  • 1 cup (200g) pitted dates, chopped
  • 1 cup (240ml) boiling water
  • 1 tsp baking soda
  • 1/2 cup (115g) unsalted butter, softened
  • 3/4 cup (150g) light brown sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • Zest of 2 blood oranges
  • 1/2 cup (120ml) blood orange juice
  • 1 1/2 cups (190g) all-purpose flour
  • 1 tsp baking powder
  • 1/4 tsp ground cardamom
  • 1/4 tsp salt
  • 1/2 cup (60g) shelled pistachios, chopped
  • 1/2 cup (100g) sugar
  • 1/2 cup (120ml) blood orange juice
  • 1 tsp rosewater

Instructions

  1. Chop the pitted dates and combine with baking soda in a bowl. Pour boiling water over them and let sit for 10 minutes.
  2. Cream together the softened butter and light brown sugar until light and fluffy. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract, blood orange zest, and blood orange juice.
  3. In another bowl, whisk together flour, baking powder, ground cardamom, and salt. Gradually fold this dry mixture into the wet ingredients, alternating with the mashed date mixture. Stir in chopped pistachios.
  4. Preheat the oven to 350°F (175°C). Grease and line an 8-inch round cake tin. Pour the batter into the prepared tin and smooth the top. Bake for 40 to 45 minutes.
  5. While the cake is baking, prepare the rosewater syrup by combining sugar and blood orange juice in a saucepan over low heat until the sugar dissolves. Stir in rosewater.
  6. Once the cake is done, let it cool for 10-15 minutes in the pan. Brush the warm cake with the rosewater syrup and transfer to a wire rack to cool completely.
