Description
A healthy twist on a classic chicken salad, wrapped in lettuce.
Ingredients

			- 2 cups cooked chicken, shredded
 - 1/2 cup bacon, crumbled
 - 1 avocado, diced
 - 1 cup cherry tomatoes, halved
 - 1/4 cup mayonnaise
 - 1 tablespoon Dijon mustard
 - 1 tablespoon lemon juice
 - Salt and pepper to taste
 - 1 head of romaine lettuce, leaves separated
 
Instructions
- In a bowl, combine shredded chicken, bacon, avocado, and cherry tomatoes.
 - In a separate bowl, mix mayonnaise, Dijon mustard, lemon juice, salt, and pepper.
 - Fold the dressing into the chicken mixture until well combined.
 - Take a lettuce leaf and spoon the chicken salad into it.
 - Wrap the lettuce around the filling and enjoy.

- Use any leftover chicken for this recipe.
