A delicious and moist blueberry banana bread that is both vegan and gluten-free.
Ingredients

- 3 ripe bananas
- 1 cup blueberries
- 1/4 cup maple syrup
- 1/4 cup coconut oil, melted
- 1 teaspoon vanilla extract
- 1 cup almond flour
- 1/2 cup gluten-free oat flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, mash the bananas until smooth.
- Add maple syrup, melted coconut oil, and vanilla extract to the bananas and mix well.
- In another bowl, combine almond flour, oat flour, baking soda, and salt.
- Mix the dry ingredients into the wet ingredients until just combined.
- Gently fold in the blueberries.
- Pour the batter into a greased loaf pan.
- Bake for 45-50 minutes or until a toothpick comes out clean.
- Let it cool before slicing.
Notes
- Store leftovers in an airtight container.
- This bread can be frozen for up to 3 months.
- Feel free to add nuts for extra texture.
