Description
This Blueberry Caramel Upside Down Cake features a sweet caramel base topped with fresh blueberries, creating a delightful dessert.
Ingredients
Scale
- 1 cup fresh blueberries (plus extra for garnish)
- 1/2 cup unsalted butter (1 stick), melted
- 1 cup brown sugar, packed
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup buttermilk (or milk with 1/2 tablespoon vinegar added)
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9-inch round cake pan with butter or non-stick spray.
- In a medium bowl, combine the melted butter and brown sugar. Stir until well mixed. Pour this mixture into the bottom of the prepared cake pan, spreading it evenly.
- Scatter the fresh blueberries evenly over the caramel mixture in the cake pan. Set aside.
- In a large mixing bowl, beat together the granulated sugar and eggs until light and fluffy. Add the vanilla extract and mix well.
- In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
- Gradually add the dry ingredients to the egg mixture, alternating with the buttermilk. Start and end with the dry ingredients, mixing until just combined. Be careful not to overmix.
- Gently pour the batter over the blueberries in the cake pan, spreading it evenly.
- Place the cake in the preheated oven and bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean.
- Once baked, remove the cake from the oven and let it cool in the pan for about 10 minutes. Carefully run a knife around the edges to loosen it, then invert the cake onto a serving plate. The caramel and blueberries should be on top.
- Allow the cake to cool slightly before slicing. Serve warm or at room temperature, garnished with additional blueberries if desired.
Notes
- For an extra touch, serve with whipped cream or vanilla ice cream.
- Use fresh blueberries for the best flavor and texture.
- For a more intense caramel flavor, cook the brown sugar and butter mixture on the stove until it bubbles before pouring it into the cake pan.
