Delicious blueberry streusel cake with a crumbly topping.
Ingredients
- All-purpose flour – 2 cups (240 grams)
- Granulated sugar – 1 cup (200 grams)
- Baking powder – 2 teaspoons
- Baking soda – 1/2 teaspoon
- Salt – 1/2 teaspoon
- Unsalted butter – 1/2 cup (115 grams), softened
- Eggs – 2 large
- Vanilla extract – 1 teaspoon
- Buttermilk – 1 cup (240 ml)
- Fresh blueberries – 1 cup (150 grams)
- For the streusel topping:
- All-purpose flour – 1/2 cup (60 grams)
- Brown sugar – 1/2 cup (100 grams)
- Unsalted butter – 1/4 cup (60 grams), melted
- Ground cinnamon – 1 teaspoon
- Salt – a pinch
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan or line it with parchment paper.
- In a large mixing bowl, whisk together the flour, granulated sugar, baking powder, baking soda, and salt until well combined.
- In another bowl, beat the softened butter until creamy. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
- Gradually add the dry mixture to the butter mixture, alternating with the buttermilk. Begin and end with the dry ingredients, mixing until just combined. Do not overmix. Gently fold in the fresh blueberries.
- In a small bowl, combine the flour, brown sugar, melted butter, ground cinnamon, and a pinch of salt. Mix until crumbly.
- Pour the batter into the prepared cake pan, spreading it evenly. Sprinkle the streusel topping generously over the cake batter.
- Place the cake in the preheated oven and bake for 45-50 minutes, or until a toothpick inserted into the center comes out clean. The top should be golden brown.
- Once baked, remove the cake from the oven and let it cool in the pan for about 10 minutes. Then transfer it to a wire rack to cool completely. Slice and serve the cake warm or at room temperature.
Notes
- For an extra touch, dust the cooled cake with powdered sugar before serving.
- This cake pairs wonderfully with vanilla ice cream or whipped cream.
