  • Eggs – 3 large
  • Milk – 1 cup (240 ml)
  • Baking powder – 2 teaspoons
  • Vanilla extract – 2 teaspoons
  • Salt – 1/2 teaspoon
  • Fresh blueberries – 1 cup (150 g), plus extra for topping
  • Heavy cream – 1 cup (240 ml), for frosting
  • Powdered sugar – 1/2 cup (60 g), for frosting
  • Cream cheese – 8 oz (225 g), softened, for frosting
  • Lemon zest – 1 teaspoon, for frosting (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. Cream together the softened butter and granulated sugar until light and fluffy, about 3-4 minutes. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  3. In a separate bowl, whisk together the all-purpose flour, baking powder, and salt.
  4. Gradually add the dry ingredients to the wet mixture, alternating with the milk. Start and end with the dry ingredients. Mix until just combined. Gently fold in the fresh blueberries.
  5. Divide the batter evenly between the prepared cake pans. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Allow the cakes to cool in the pans for 10 minutes before transferring them to a wire rack to cool completely.
  6. In a mixing bowl, beat the softened cream cheese until smooth. Gradually add the powdered sugar and heavy cream, mixing until the frosting is light and fluffy. If desired, add lemon zest for extra flavor.
  7. Once the cakes are completely cooled, place one layer on a serving plate. Spread a layer of frosting on top, then add a layer of fresh blueberries. Place the second cake layer on top and frost the top and sides of the cake with the remaining frosting.
  8. Top the cake with additional fresh blueberries for a vibrant finish. You can also scatter some blueberries around the base of the cake for extra decoration.
  9. Slice the cake and serve it chilled or at room temperature.
