Description

A rich and indulgent Boston Cream Pie Poke Cake with layers of chocolate ganache, vanilla pudding, and creamy frosting.

Ingredients

Scale
  • 1 box of vanilla cake mix (plus ingredients required on the box, usually eggs, oil, and water)
  • 1 cup of heavy cream
  • 1 cup of semi-sweet chocolate chips
  • 1 cup of vanilla pudding mix (instant)
  • 2 cups of milk (for the pudding)
  • 1 cup of powdered sugar
  • 1/2 cup of unsalted butter, softened
  • 1 teaspoon of vanilla extract
  • 1/4 cup of boiling water
  • Pinch of salt

Instructions

  1. Preheat your oven according to the instructions on the vanilla cake mix box. Grease and flour a 9×13 inch baking pan. Prepare the cake batter as directed on the box, then pour it into the prepared pan. Bake according to the package instructions until a toothpick inserted in the center comes out clean. Allow the cake to cool completely in the pan.
  2. In a small saucepan over medium heat, combine the heavy cream and chocolate chips. Stir until the chocolate is completely melted and the mixture is smooth. Remove from heat and let it cool slightly.
  3. Once the cake is completely cooled, use the handle of a wooden spoon or a skewer to poke holes all over the top of the cake, about 1 inch apart.
  4. Pour the warm chocolate ganache evenly over the top of the cake, making sure it seeps into the holes. Allow the cake to absorb the ganache for about 30 minutes.
  5. In a mixing bowl, whisk together the vanilla pudding mix and milk until it thickens. Spread the pudding evenly over the top of the soaked cake.
  6. In a separate bowl, beat the softened butter with an electric mixer until creamy. Gradually add the powdered sugar, vanilla extract, and a pinch of salt. Mix until smooth and fluffy. If the frosting is too thick, add a little milk to reach your desired consistency.
  7. Spread the chocolate frosting over the vanilla pudding layer, smoothing it out with a spatula.
  8. Refrigerate the cake for at least 2 hours to allow the flavors to meld and the cake to set. When ready to serve, slice the cake and enjoy the layers of moist cake, rich chocolate, and creamy vanilla pudding.

Notes

  • For added flavor, you can add a teaspoon of instant coffee to the ganache for a mocha twist.
  • Decorate the top of the cake with chocolate shavings or sprinkles for a festive touch.
  • This cake can be made a day in advance and stored in the refrigerator, making it a great option for gatherings.
