Ingredients

- 1 kg chicken pieces
- 400 ml coconut milk
- 2 tablespoons olive oil
- 1 onion, chopped
- 3 garlic cloves, minced
- 1 teaspoon ginger, grated
- 1 bell pepper, sliced
- 1 teaspoon paprika
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion, garlic, and ginger. Sauté until fragrant.
- Add chicken pieces. Brown on all sides.
- Stir in bell pepper and paprika. Cook for a few minutes.
- Pour in coconut milk. Season with salt and pepper.
- Simmer for 30 minutes until chicken is cooked through.
- Garnish with fresh cilantro before serving.
