Description
A flavorful Brazilian fish stew made with coconut milk, tomatoes, and spices.
Ingredients

- 2 pounds white fish fillets
- 1 cup coconut milk
- 1 large onion, chopped
- 2 tomatoes, chopped
- 1 bell pepper, chopped
- 4 cloves garlic, minced
- 1/4 cup olive oil
- 1/4 cup fresh cilantro, chopped
- Juice of 1 lime
- Salt and pepper to taste
Instructions
- Marinate the fish with lime juice, salt, and pepper for 30 minutes.
- Heat olive oil in a pot over medium heat.
- Add onions and garlic, sauté until translucent.
- Add bell pepper and tomatoes, cook until soft.
- Pour in coconut milk and bring to a simmer.
- Add the marinated fish and cook for 15 minutes.
- Stir in cilantro just before serving.
