Description

A quick and simple breakfast dish made with leftover rice, vegetables, and eggs.


Ingredients

  • 2 cups cooked rice
  • 2 eggs
  • 1 cup mixed vegetables (carrots, peas, corn)
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 2 green onions, chopped
  • Salt to taste

Instructions

  1. Heat sesame oil in a pan over medium heat.
  2. Add mixed vegetables and sauté for 3-4 minutes.
  3. Push the vegetables to the side and crack the eggs into the pan.
  4. Scramble the eggs until fully cooked.
  5. Add the cooked rice and soy sauce to the pan.
  6. Mix everything together and cook for another 2-3 minutes.
  7. Stir in green onions and season with salt.
  8. Serve hot.
