Ingredients

- 2 cups cooked rice
- 2 eggs
- 1 cup mixed vegetables (carrots, peas, corn)
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- 2 green onions, chopped
- Salt to taste
Instructions
- Heat sesame oil in a pan over medium heat.
- Add mixed vegetables and sauté for 3-4 minutes.
- Push the vegetables to the side and crack the eggs into the pan.
- Scramble the eggs until fully cooked.
- Add the cooked rice and soy sauce to the pan.
- Mix everything together and cook for another 2-3 minutes.
- Stir in green onions and season with salt.
- Serve hot.
