Description
A creamy and cheesy soup made with fresh broccoli and cheddar cheese.
Ingredients

- 4 cups broccoli florets
- 1 cup shredded cheddar cheese
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1 cup heavy cream
- 2 tablespoons butter
- Salt and pepper to taste
Instructions
- In a large pot, melt butter over medium heat.
- Add onion and garlic, sauté until translucent.
- Add broccoli and vegetable broth. Bring to a boil.
- Reduce heat and simmer for 15 minutes until broccoli is tender.
- Puree the soup using an immersion blender until smooth.
- Stir in heavy cream and cheddar cheese until melted.
- Season with salt and pepper to taste.
- Serve hot.

- Use fresh broccoli for best flavor.
- Adjust cheese quantity to your preference.
- Store leftovers in the refrigerator for up to 3 days.
