Ingredients

Instructions

  1. In a large pot, melt butter over medium heat.
  2. Add onion and garlic, sauté until translucent.
  3. Add broccoli and vegetable broth. Bring to a boil.
  4. Reduce heat and simmer for 15 minutes until broccoli is tender.
  5. Puree the soup using an immersion blender until smooth.
  6. Stir in heavy cream and cheddar cheese until melted.
  7. Season with salt and pepper to taste.
  8. Serve hot.
