  • 1 cup shredded cheese

  • 2 tablespoons olive oil

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Rinse the quinoa under cold water.
  3. In a pot, combine quinoa and vegetable broth. Bring to a boil.
  4. Reduce heat and simmer for 15 minutes.
  5. In a skillet, heat olive oil over medium heat. Add onions and sauté until tender.
  6. Add broccoli, garlic powder, salt, and pepper. Cook for 5 minutes.
  7. In a large bowl, mix cooked quinoa, broccoli mixture, and half of the cheese.
  8. Transfer to a baking dish and top with remaining cheese.
  9. Bake for 20 minutes until cheese is melted and bubbly.
