  • 1 cup (200 g) granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 ½ cups (190 g) all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ½ cup (120 ml) buttermilk
  • 2 medium ripe pears, peeled, cored, and diced
  • ½ cup (50 g) almond flour
  • ¼ cup (30 g) slivered almonds (for garnish)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9-inch (23 cm) round cake pan or line it with parchment paper.
  2. In a medium saucepan over medium heat, melt the unsalted butter. Continue cooking, stirring frequently, until the butter turns golden brown and has a nutty aroma, about 5-7 minutes. Remove from heat and let it cool slightly.
  3. In a large mixing bowl, combine the browned butter and granulated sugar. Whisk together until well combined. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  4. In another bowl, whisk together the all-purpose flour, baking powder, baking soda, salt, and almond flour.
  5. Gradually add the dry ingredients to the wet mixture, alternating with the buttermilk. Begin and end with the dry ingredients, mixing just until combined. Do not overmix.
  6. Gently fold the diced pears into the batter until evenly distributed.
  7. Pour the batter into the prepared cake pan and smooth the top with a spatula. Bake in the preheated oven for 40-45 minutes, or until a toothpick inserted into the center comes out clean.
  8. Once baked, remove the cake from the oven and let it cool in the pan for about 10 minutes. Then, carefully transfer it to a wire rack to cool completely.
  9. Once the cake is completely cooled, sprinkle the top with slivered almonds for garnish. Slice and serve the cake as a delightful dessert or a sweet treat with coffee or tea.
