A moist and flavorful cake made with brown butter, ripe pears, and almond flour.

- 1 cup (225 g) unsalted butter
- 1 cup (200 g) granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 ½ cups (190 g) all-purpose flour
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ¼ teaspoon salt
- ½ cup (120 ml) buttermilk
- 2 medium ripe pears, peeled, cored, and diced
- ½ cup (50 g) almond flour
- ¼ cup (30 g) slivered almonds (for garnish)
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour a 9-inch (23 cm) round cake pan or line it with parchment paper.
- In a medium saucepan over medium heat, melt the unsalted butter. Continue cooking, stirring frequently, until the butter turns golden brown and has a nutty aroma, about 5-7 minutes. Remove from heat and let it cool slightly.
- In a large mixing bowl, combine the browned butter and granulated sugar. Whisk together until well combined. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
- In another bowl, whisk together the all-purpose flour, baking powder, baking soda, salt, and almond flour.
- Gradually add the dry ingredients to the wet mixture, alternating with the buttermilk. Begin and end with the dry ingredients, mixing just until combined. Do not overmix.
- Gently fold the diced pears into the batter until evenly distributed.
- Pour the batter into the prepared cake pan and smooth the top with a spatula. Bake in the preheated oven for 40-45 minutes, or until a toothpick inserted into the center comes out clean.
- Once baked, remove the cake from the oven and let it cool in the pan for about 10 minutes. Then, carefully transfer it to a wire rack to cool completely.
- Once the cake is completely cooled, sprinkle the top with slivered almonds for garnish. Slice and serve the cake as a delightful dessert or a sweet treat with coffee or tea.
Notes
- For added flavor, sprinkle a little cinnamon or nutmeg into the batter.
- This cake can be stored in an airtight container at room temperature for up to 3 days or in the refrigerator for up to a week.
