Ingredients

- 1 cup brown rice
- 2 cups vegetable broth
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, chopped
- 1 zucchini, sliced
- 1 cup peas
- 1 teaspoon smoked paprika
- 1/2 teaspoon saffron threads
- Salt and pepper to taste
- Olive oil for cooking
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add onion and garlic, sauté until softened.
- Add bell pepper and zucchini, cook for 5 minutes.
- Stir in brown rice, smoked paprika, and saffron.
- Pour in vegetable broth, bring to a boil.
- Reduce heat, cover, and simmer for 40-45 minutes.
- Add peas, season with salt and pepper, and cook for 5 more minutes.
- Remove from heat and let it sit for 5 minutes before serving.
Notes
- For more flavor, add a squeeze of lemon before serving.
- You can substitute any seasonal vegetables you have.
- Let the paella rest covered for better texture.
