  • 1/2 cup (115 g) unsalted butter, softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup (240 ml) buttermilk
  • 2 cups (250 g) all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground cloves
  • 1 cup (150 g) pitted dates, chopped
  • 1/2 cup (120 ml) water (for syrup)
  • 1/2 cup (100 g) brown sugar (for syrup)
  • 1/2 teaspoon ground cloves (for syrup)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan or line it with parchment paper.
  2. In a large mixing bowl, cream together the softened butter and brown sugar until light and fluffy for about 3-5 minutes.
  3. Beat in the eggs one at a time, mixing well after each addition. Then, stir in the vanilla extract.
  4. Gradually mix in the buttermilk until well combined.
  5. In a separate bowl, whisk together the flour, baking soda, baking powder, salt, ground cinnamon, and ground cloves.
  6. Gradually add the dry ingredients to the wet mixture, stirring until just combined. Be careful not to overmix.
  7. Gently fold in the chopped dates until evenly distributed throughout the batter.
  8. Pour the batter into the prepared cake pan and smooth the top. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  9. While the cake is baking, prepare the clove syrup in a small saucepan by combining 1/2 cup of water, 1/2 cup of brown sugar, and 1/2 teaspoon of ground cloves. Bring to a simmer over medium heat, stirring until the sugar dissolves. Reduce heat and let it simmer for about 5 minutes until slightly thickened. Remove from heat and let cool.
  10. Once the cake is done, remove it from the oven and let it cool in the pan for about 10 minutes. Then, transfer it to a wire rack to cool completely.
  11. Once the cake is cool, slice it and drizzle the clove syrup over each piece. Serve on a simple white plate, allowing the syrup to pool around the cake.
