Cajun Chicken Pasta made in a crockpot for a flavorful and easy meal.
Ingredients

- 1 lb chicken fillet
- 8 oz penne pasta
- 1 can diced tomatoes (14.5 oz)
- 1 cup chicken broth
- 1 cup heavy cream
- 1 onion, chopped
- 1 bell pepper, chopped
- 2 cloves garlic, minced
- 2 tbsp Cajun seasoning
- 1 cup shredded cheese
- Salt and pepper to taste
Instructions
- Place chicken fillet in the crockpot.
- Add diced tomatoes, chicken broth, onion, bell pepper, garlic, and Cajun seasoning.
- Cover and cook on low for 6 hours or high for 3 hours.
- Remove chicken, shred it, and return it to the pot.
- Add heavy cream and uncooked pasta.
- Stir well and cook for an additional 30 minutes on high.
- Stir in cheese until melted. Serve hot.

- Adjust Cajun seasoning to your taste.
- Use your choice of pasta.
- Can substitute heavy cream with a lighter option.
