Cajun Chicken Pasta made in a crockpot for a flavorful and easy meal.


Ingredients

  • 1 lb chicken fillet
  • 8 oz penne pasta
  • 1 can diced tomatoes (14.5 oz)
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1 onion, chopped
  • 1 bell pepper, chopped
  • 2 cloves garlic, minced
  • 2 tbsp Cajun seasoning
  • 1 cup shredded cheese
  • Salt and pepper to taste

Instructions

  1. Place chicken fillet in the crockpot.
  2. Add diced tomatoes, chicken broth, onion, bell pepper, garlic, and Cajun seasoning.
  3. Cover and cook on low for 6 hours or high for 3 hours.
  4. Remove chicken, shred it, and return it to the pot.
  5. Add heavy cream and uncooked pasta.
  6. Stir well and cook for an additional 30 minutes on high.
  7. Stir in cheese until melted. Serve hot.
