Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion and garlic; sauté until soft.
- Add diced potatoes and Cajun seasoning; stir well.
- Pour in chicken broth; bring to a boil.
- Reduce heat and simmer until potatoes are tender.
- Mash some potatoes for a creamy texture.
- Stir in heavy cream; season with salt and pepper.
- Serve hot, garnished with green onions.
