Ingredients

- 1 cup long-grain rice
- 2 cups chicken broth
- 1 tablespoon olive oil
- 1 medium onion, diced
- 1 bell pepper, diced
- 2 cloves garlic, minced
- 1 teaspoon Cajun seasoning
- 8 ounces chicken sausage, sliced
- 1 can diced tomatoes, drained
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pan over medium heat.
- Add onion, bell pepper, and garlic. Sauté until soft.
- Stir in chicken sausage and cook until browned.
- Add rice and stir to coat with the oil.
- Pour in chicken broth and add Cajun seasoning.
- Bring to a boil, then reduce heat to low.
- Cover and simmer for 20 minutes or until rice is tender.
- Stir in diced tomatoes and season with salt and pepper.
- Serve hot.
Notes
- For added spice, include more Cajun seasoning.
- Feel free to add vegetables like okra or corn.
