Ingredients

  • Linguine pasta: 8 oz (about 225 g)
  • Large shrimp: 1 lb (about 450 g), peeled and deveined
  • Cajun seasoning: 2 tablespoons
  • Garlic: 4 cloves, minced
  • Heavy cream: 1 cup (about 240 ml)
  • Bell peppers: 1 red and 1 green, sliced
  • Onion: 1 medium, thinly sliced
  • Olive oil: 2 tablespoons
  • Fresh parsley: 1/4 cup, chopped
  • Salt and pepper: to taste
  • Grated Parmesan cheese: for serving (optional)

Instructions

  1. Rinse the shrimp under cold water and pat them dry. Sprinkle Cajun seasoning over the shrimp and toss to coat.
  2. In a large pot, bring salted water to a boil and cook the linguine according to package instructions until al dente. Reserve 1/2 cup of pasta water before draining.
  3. Heat olive oil in a large skillet over medium heat. Add the seasoned shrimp and cook for 2-3 minutes on each side until pink and opaque. Remove shrimp and set aside.
  4. Add sliced onion and bell peppers to the same skillet and sauté for about 5 minutes until tender. Add minced garlic and cook for an additional 1-2 minutes.
  5. Pour heavy cream into the skillet, stir, and bring to a gentle simmer. Cook for 3-4 minutes until slightly thickened, adding reserved pasta water if necessary.
  6. Add cooked linguine and shrimp back into the skillet, tossing to coat with the sauce. Season with salt and pepper to taste.
  7. Stir in chopped parsley and serve hot, garnished with additional parsley and grated Parmesan cheese if desired.
